4APV visited the Puni whiskey distillery in Glurns

On Tuesday, 13th of May the class 4APV visited the Puni whiskey distillery in Glurns

The building designed by the architect Werner Tscholl houses Italy’s only whiskey distillery. Our guide told us about the ingredients of whiskey which are barely, water and yeast. The barely is delivered from Sicily and Puni’s typical whiskey is first fermented in larch barrels for a three days. The cereal must undergo a malting process by germinating, it is then filtered into copper still pots in order to be distilled in wash still and spirit still until methanol and bad tasting alcohol is removed. It is distilled in copper stills. Copper is important as it removes toxic sulphites. Now it is the work of the whiskey master to age new make spirit in oak casks. The minium aging time in Glurns is shorter than in Scotland due to our varying temperatures. Furthermore, some Puni whiskey is matured in Marsala casks and it has a typical unique flavour. Puni whiskey is single malt, a available as Bourboun oak or Marsala, smoked or vatted, and many more. But these are secrets - the Angel’s share would know. Cheers!
